Reviewing Tequila Sunrise Cupcakes

For all my alcohol and cupcake lovers, this one is for you! I tried this recipe awhile ago and I was nervous that I wasn't going to like it because I usually don't like to work with alcohol, but man were these cupcakes good! Here is the recipe and my thoughts on it!

Tequila Sunrise Cupcakes

Makes 12-14 cupcakes
Prep time: 30 minutes
Cook time: 15-17

Ingredients:

Cupcakes:
-6 T unsalted butter
- 3/4 cups sugar
- 6 T sour cream
- 1/4 tsp vanilla
- 1/2 tsp finely grated orange zest
- 3 egg whites
- 1 1/4 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup fresh squeezed orange juice
- 2 T tequila (of your choice)
- 2 T milk

Frosting:
- 3/4 Cup salted butter
- 1/2 cup shortening
- 5 cups powdered sugar
- 1 T tequila
- 1 tsp finely grated orange zest
- 2 tsp fresh squeezed orange juice
- 5 tsp grenadine
- orange icing color, optional
- 12-14 cherries, optional
- 12-14 quarter sliced of oranges, optional

Instructions:

Cupcakes:
1. Preheat the oven to 350 degrees and prepare the liners.
2. Cream butter and sugar together until light in color and fluffy, about 3-4 minutes.
3. Add sour cream, vanilla, and orange zest and mix together.
4. Add egg whites in two batches, mixing until well combined after each. Scrape down the sides of the bowl well.
5. Combine orange juice, tequila, and milk in a small measuring cup.
6. Add half of the dry ingredients to the batter and mix until well combined. Add the orange juice mixture and mix until well combined. Add remaining dry ingredients and mix until well combined. Scrape down the sides of the bowl well.
7. Fill the cupcake liners about halfway. Bake for 15-17 minutes.

Frosting:
1. Beat the butter and shortening together until combined and smooth.
2. Add about half of the powdered sugar and mix until smooth.
3. Add the tequila and mix until smooth.
4. Add the remained powdered sugar and mix until smooth.
5. Dived the frosting in half. Add the orange zest and juice to one half and the grenadine to the other half. Add some orange icing color the orange frosting if you want.
6. Put each of the two frosting's into two piping bags, then place both piping backs into one large bag fitted with a tip of your choice. Pipe onto cupcakes. Garnish with a cherry and orange slice, if desired.

These are best stored in the refrigerator.


These cupcakes are definitely one for the alcohol type. They are great for a summer party or anything along those lines. I thought they were pretty good, but I am for sure a chocolate fan so they weren't my favorite. I think that if you are a orange lover and like alcohol then these are for you. If you are more of a chocolate fan, then I would go with a different option. Hopefully these were something you were looking for! Like I said, a summer party would be great!
